Coolwhip Cookies

I found a recipe on pinterest for these delicious looking treats called "Coolwhip Cookies". When I set out to bake them I had imagined they would be these little soft and chewy cookies that were sweet and yummy. With that picture in my head I gathered all of the necessary ingredients and got to work. 

You need…
1 Box Funfetti cake mix
2 Eggs
1 Container of Cool Whip (8 oz)
1/3 cup of powered sugar for rolling

As I mixed the whip cream, eggs, and cake mix together it turned into a consistency I didn't quite expect. It was stick but fluffy and airy at the same time. I then rolled the dough into little blob like balls and rolled them in the icing sugar, and carefully placed them on my baking sheet. I line my baking sheet with wax paper so it doesn't stick, but butter or pam works just as well. After getting all of my blobs carefully placed I put them in to over at 350 for 8 minutes. After the 8 minute mark i checked the cookies and they still seemed to be "Cake mix-ish" so I left them in for another 10 minutes or so. When I took them out of the oven they had become much larger than I had expected. Turns out I was making my blobs a bit too big. After letting them cool I decided to share with my family, and we all munched on our Delicious treats.

The cookies didn't exactly have the texture that I had originally thought they would. The only thing I can compare it to is, if you were to take cake batter and put it on a tray and bake it. They were spongy, but not crumbly. The end result was not completely perfect, but they were still so very yummy and delicious that I think they may just be worth making again!

Here are the proper directions for anyone interested in experimenting with baking these yummy treats.
1. Beat together Cool Whip and eggs. 
2. Add cake mix to mixture and mix together.
3. Let the mixture cool for 30 minutes.
4. Put powered sugar in a bowl. Take balls of the dough (about a spoonful) and roll them in the powered sugar. Place on a greased cookie sheet. Repeat until all of your cookies have been made and are on cookie sheets.
5. Bake at 350 degrees for 9-11 minutes. I baked them for 9 minutes and they were perfect. 
6. Let them cool off and then stuff your face with this deliciousness.

Dragging my feet...

  Last night I set my alarm in anticipation of starting my day right. Obviously my hopes for myself were a bit too high because the alarm went off and I hit snooze. Ten minutes later the alarm went off, again I hit the snooze. This happened twice more until finally in a sleepy state of mind set the alarm for a later time, a MUCH later time! So now instead of having the excuse "I'm so tired because I barely had any sleep" I have to explain how I'm tired because I OVER slept.

  Now I understand how some of you are probably thinking "Oh poor girl she over slept. Lucky little brat" and yes I completely agree with that statement. But let me explain something to give you a more clear reason to why over sleeping makes me tired. When I was 7 I was diagnosed with Juvenile Rheumatoid Arthritis. This basically means that my immune system has been fighting with itself, in turn cause me painful swollen joints. Over the years I have become more able to manage my disease, but that mean getting just the right amount of sleep , along with medication, exercise and balanced meals. If I get too little or too much sleep I get tired very quickly. Now you understand why oversleeping makes me tired.

  Well now I have to get ready to go to Easter dinner with my boyfriends family. I need to start getting myself more prepared for these things, because all I've done since I woke up is drag my feet and stare into space. Looks like I must face the day and pull myself into a presentable human being. Wish me luck!

That moment when...

   Throughout life we experience moments that we remember forever. They may not always be in the forefront of your mind, but they creep back to you slowly, and unexpectedly. I call these my  "more often than not" moments. They tend to be the memories that make you think to yourself  "did that really happen to me?"
   At 22 years old I have experienced this feeling a lot more than I would like to admit. Every now and then I enjoy sharing these moments, and that is what I am going to do through this blog. Here are just a few examples of some of my moments. Every now and then I will post more, and I encourage you to share yours with me as well.

That moment when you are walking through the grass during a beautiful summer day. then all of a sudden you feel it. The horrifying sharp sting on the side of your foot. Fearing the worst you start panicking, your heart starts racing, and as if you have to control over yourself you scream "Get it off!! Get it off!!". As everyone stares at you in confusion, you gather up the courage to swat at whatever it is that is trying to eat you alive. As you look down you realize that it is just a prickle from one of the bushes you must have walked though. At that moment you try to play it off as nothing, but you have already created such a scene that no one will let you live it down.

That moment when you are slowly but surely making your way through your to do list, and all of a sudden you hit the wall. You feel like you are drained, and can't go on. It wasn't but a minute ago that you felt invincible, like you could get everything done but now here you, tired and cranky. You start thinking in your head "I want to go home. I want to lay in my bed. I want to watch a movie. I want to do anything but this." So you pack yourself up and head home, facing the inevitable truth that you are no match for the wall, and you will just have to rest up and try to tackle it tomorrow.
